Biscoff Cookies • Sweetened Condensed Milk • Heavy Cream
To make the cupcakes:
1. Preheat your oven to 350 degrees Fahrenheit and prep your cupcake pan with liners + spray.
2. In the BestHealth Mega, add the ingredients in the following order: milk, oil, vanilla, eggs, flour, baking powder, sugar, and salt.
3. Blend for 30-45 seconds or until all ingredients are fully broken down and the batter is smooth. NOTE: You may need to stop blending halfway and scrape down the sides and continue again.
4. Pour the batter into each cupcake liner (¾ full) and bake for 15-17 minutes or until a toothpick comes out clean in the center.
5. Once done, turn off oven and keep cupcakes inside with the oven door slightly open for about 2 minutes before taking them out.
6. Remove from oven and Let them cool COMPLETELY before frosting.
To make the frosting:
1. Simply beat the softened butter in the bowl of an electric mixer (or using a hand-mixer) on medium-high speed, until smooth and pale.
2. Add in the powdered sugar, vanilla, food coloring, and milk, continuing to mix on medium-speed until you reach the desired consistency----smooth and fluffy. NOTE: Add more milk (1 tablespoon at a time if too thick) or powdered sugar (for more thickness).
3. Add buttercream to a piping bag and pie onto cooled cupcakes and sprinkle with festive sprinkles generously.
