1. Pour the milk in a saucepan. Heat the milk and bring it to a boil over medium-high heat.
2. As soon as it boils, add the lemon juice and then turn off the heat.
3. Set aside for a few minutes while the milk curdles. You'll notice curds forming and a yellow-ish liquid being left behind.
4. Within a few minutes all your curds should have formed.
5. Pour through a nut milk bag or a cheesecloth and strain through a sieve and strain all the liquid whey.
6. Rinse the curds with cold water and then strain until there is no more liquid.
7. Add strained milk, salt, and a splash of heavy whipping cream to your Beast Blender and blend until smooth.
8. Pour into bowl and add the chives, green onion, roasted garlic, and mix until well combined.
9. Add to your favorite meal!
