Carrot Miso Ginger Dressing

Dressings + Sauces
Ingredients:
cauliflower
1 head
milk of choice
1 1/4 cups
onion
1/4, finely chopped
freshly grated parmesan cheese
1/3 cup
garlic cloves
3, roughly chopped
shallot
1, roughly chopped
pasta of choice
1 lb
salt
1-2 tsp
black pepper
1/4 tsp
Italian seasoning
1 tsp
butter
2 tbsp
parsley
to taste
pasta water
as needed
Instructions:
1. Cut your cauliflower into small pieces and boil for about 15 minutes or until tender.
2. While the cauliflower boils, sauté your onions for 2-3 minutes then add in the garlic and sauté until fragrant (for about 30 seconds).
3. Once tender, strain the cauliflower and let it cool completely.
4. Add your cooled cauliflower, milk, seasonings, garlic, shallot, and Parmesan cheese to your Beast and blend until smooth.
5. In a pan on medium low heat add the Cauliflower Alfredo sauce and cook until warmed through. Once warm, add your cooked pasta, butter, and some reserved pasta water and mix until well combined.
6. Top with Parmesan cheese, parsley, and your choice of protein. Serve and enjoy!
