Ingredients: 10 (quartered ) roma tomatoes; 1 garlic; 1 (quartered) yellow onion; 10 basil stems; handful fresh basil; a generous amount extra virgin olive oil; a drizzle balsamic vinegar; 2-3 sprigs rosemary; to taste salt; to taste pepper; 1-2 tsp Better than bouillon Italian Herb base; 2/3 cup vegetable broth; 1/4 cup heavy whipping cream; 1/4 cup freshly grated parmesan cheese

extra virgin olive oil
balsamic vinegar
rosemary

Better than bouillon Italian Herb base
vegetable broth
heavy whipping cream
freshly grated parmesan cheese

Preparation

Preheat over to 400.
Line a baking sheet with parchment paper and add your tomatoes, garlic, onions, basil stems, rosemary sprigs, balsamic vinegar, evoo, salt, and pepper.
Bake in the oven for 40 mins or until nice and roasted.
Once the veggies have roasted. Let the veggies completely cool before blending them (this step is very important).
Once the veggies are cooled, add to the blender along with some basil, better than bouillon Italian herb seasoning, broth, salt and pepper and blend (adjust seasonings if necessary).
Pour the soup in a pot on medium heat and add heavy whipping cream and parmesan cheese and cook until warmed through.
Pour soup in a bowl and top with a drizzle of some heavy cream and a fresh basil leaf. Serve with a grilled cheese and enjoy.
