  • maple syrup
  • Worcestershire sauce
  • apple cider vinegar

Preparation

  1. Prepare the grill. If using charcoal, light 30–40 minutes in advance. If using gas, preheat to medium-high 10 minutes before cooking.
  2. Combine all coffee rub ingredients (first 10 ingredients - excluding the oil) in the Beast Blender and pulse until evenly combined and spices are lightly crushed.
  3. Pat the meat dry and lightly coat with neutral oil.
  4. Generously cover all sides with the coffee rub, pressing it onto the surface. Set aside while you prepare the sauce.
  5. Add the tomato sauce, brewed coffee, bourbon, maple syrup, Worcestershire sauce, apple cider vinegar, garlic, chilli flakes and smoked paprika to the Beast Blender. Blend until smooth.
  6. Pour the sauce into a saucepan and simmer over medium heat for 15–20 minutes, stirring occasionally, until thickened and glossy. Reserve half for serving, keep the rest for basting.
  7. Grill the steak to your preferred doneness, turning occasionally and basting with sauce as you turn.
  8. Remove from the grill and rest on a cutting board, loosely tented with foil, for 10–15 minutes.
  9. Slice against the grain and serve with the reserved sauce on the side.
